Honey Mesquite
Prosopis glandulosa, or the Honey Mesquite, is a perennial deciduous tree that grows about as tall as it is wide with bright-green, feathery leaves. It produces tiny fragrant flowers between April and August and fruit long, yellow-brown seed pods, which are prepared into meal and cakes by some Southwestern Indians. The Honey Mesquite is largely regarded as a weed by cattle ranchers. When removed, its deep taproot is often larger than the trunk and can be used as firewood.
